Innovating Desserts in Indonesia with Indomilk

When we think of the world's dessert capitals, Indonesia might not be the first country that comes to mind. Although the archipelago is known for its array of delicious traditional sweets and snacks, it hasn’t quite gained the same international acclaim for sophisticated and complex baking techniques seen elsewhere. Despite this, Indonesia is brimming with talented bakers, innovative brands, and companies deeply passionate about food, including desserts.

Recognizing this potential, PT Indolakto, a subsidiary of PT Indofood CBP Sukses Makmur Tbk ("ICBP"), has introduced Indomilk FnB Solutions, a comprehensive approach to supporting the Food Service market with high-quality dairy products. This initiative offers a wide range of dairy options, including Fresh Milk, UHT Milk, Powdered Milk, Sweetened Condensed Milk, Evaporated Milk, Butter, and Ice Cream. These products cater to the growing needs of bakery and pastry businesses, which are essential in developing more refined and innovative dessert offerings.

Adryan Widodo, General Manager of Cold Chain and Food Service at PT Indolakto, expressed the company's dedication to enhancing Indonesia's dessert scene. “Indomilk FnB Solutions is committed to being a comprehensive solution and support for F&B businesses, offering high quality, product freshness, a complete range of dairy products, an extensive distribution network, and collaboration and co-creation to ensure consumer satisfaction,” he stated. Each product in the Indomilk FnB Solutions lineup meets Halal MUI certification and adheres to international food safety standards.

The dessert market in Indonesia has seen rapid growth, fueled by the increasing popularity of bakery and pastry shops, both from local and international brands. This expansion has been further accelerated by the rise of home-based baking businesses, particularly during the pandemic, supported by digital marketplaces and the trend toward omnichannel shopping. In this competitive environment, innovation has become crucial for businesses to remain relevant and to carve out new opportunities. According to market intelligence agency Mintel, the appeal of premium dessert creations is on the rise, with 42% of Indonesian consumers reporting that they enjoy desserts daily. These sweet treats are often viewed as moments of indulgence or a celebration of small achievements, presenting a significant opportunity for bakeries and pastry shops to tap into this growing market.

Indomilk FnB Solutions recently demonstrated the versatility of its products at the Dessert Omakase event, held on August 15, 2024, at Ra Suites Simatupang. The event showcased the benefits of Indomilk Good Milk UHT and introduced the Australian Butter Baking, which promises to be a game-changer for both home-based bakers and professional chefs. Pastry Chef Kim Pangestu featured premium dessert creations like Tropical and Beso de Angel, highlighting how these ingredients contribute to a rich, creamy texture and flavor that elevate any dessert. Chef Kim noted that Indomilk Good Milk UHT provides a rich, milky, and creamy texture and flavor, while Australian Butter Baking offers a sturdy cake structure with a soft, moist texture and a delectable milky buttery aroma.

The event also highlighted the growing trend of pairing desserts with coffee, reflecting the evolving tastes of consumers who seek out unique and indulgent experiences. Coffee expert Hendri Kurniawan presented coffee options that complemented Chef Kim’s dessert creations, emphasizing the importance of using high-quality milk in coffee beverages. He explained that the ideal protein-to-fat ratio and absence of added sugars in Indomilk Good Milk Susu Pasteurisasi enhance the flavor profile of hot coffee beverages, making for a smooth and creamy mouthfeel that pairs perfectly with sweet treats.

Guests at the Dessert Omakase event also enjoyed savory dishes by Corporate Executive Chef Arsil Rusli of Ra Hospitality, providing a well-rounded culinary experience. The event was held in the fully equipped banquet facilities at Ra Suites Simatupang, which also features the 25th Avenue coffee bar. Located on the lobby floor, this bar invites guests to enjoy a variety of milk-based coffee creations alongside fresh desserts and bread from the dessert counter.

Through initiatives like Indomilk FnB Solutions, PT Indolakto is contributing to the evolution of Indonesia’s dessert culture, offering quality ingredients that inspire bakers and pastry chefs to push the boundaries of traditional baking. By supporting innovation and creativity, Indomilk FnB Solutions aims to position Indonesia as a noteworthy player in the global dessert scene.
